Jaxon's Dr Visit!
Time for another Dr visit for the little guy. Since Covid is really bad, we were moved to a clinic that didn't have any covid related patients. Thank goodness because this whole Covid thing and an infant is super stressful already. The little guy got his checkup though and was a happy baby through it all.

Covid Birthday 2020
Happy birthday to me!
Celebrating Covid style. Which pretty much means, trying to cook a yummy meal at home and celebrating with your Nuclear family only.
So this is 39!
I requested garlic shrimps for my birthday. In reminiscent of my birthday last year; Garlic Shrimp trucks in Hawaii.
Check out the shrimps!


Best part though? The card from baby girl and the cupcake she made with love.

Attempting to Make Some Panna Cotta
Mommy and Zoë at it again. This time, we're making some Panna Cotta!

We wanted to make a Strawberry Panna Cotta, so we had to cook down the strawberries, add sugar and then squish out all the juice. Zoë really liked squishing down the strawberries through our mesh basket, which I had to improvise with since I didn't have a sieve. We made it work though!




Then Zoë cooked down the gelatin and mixed it in with the strawberry juice.


Once they were all mixed in nicely, I poured it all into 4 little oven safe bowls. Again, we had to improvise because I couldn't find my ramekins.

And tada! Not quite perfect, but not bad for our first try.

And now a taste test.

Zoë approved, but not quite her favorite.

Covid Hoarding Getting Ridiculous
Ever since the covid lockdown, people have been panic buying, hoarding unnecessarily or hoarding to take advantage of the situation and re-selling with massive price hikes (the latter being so dispicable).
The worst items that were disappearing from all local shopping areas were bathroom tissue and disinfecting items (disinfecting wipes, hand sanitizer, disinfecting sprays, etc). It was so bad. We were lucky enough to get the huge packs from Costco before supplies were depleted. And Momma Dinky was able to get a ton of hand sanitizers, disinfecting wipes and Lysol sprays for all of us. But sadly, the panic buying made it insane. No one found bathroom tissue anywhere! Same for disinfecting supplies.
Well, now, there's another item to add to the list. Apparently hair color products have been hard to come by!

So weird! Guess the ladies aren't too comfortable having their greys peek through. Lol.

Happy Easter!!
What a weird Easter celebration this year. With the Covid lockdown, we couldn't have a typical egg hunt. We couldn't hold it at a public park and getting families and/or friends together is not advisable either. Since we don't really have a front or back yard, we had to settle for an egghunt in the living room.

While Zoë and Jaxon were fast asleep, mommy and daddy got to work assembling and hiding.



Check out Zoë's haul! Jaxon didn't do much but sit back and relax while his sister did all the work. Typical boy. Hahaha.

Now time to open all the eggies while showing her brother eggs and goodies here and there. Some eggs had toys, some had candy and some had disney dollars! Which totally translate into real dollars.



She's definitely happy with her egg hunt haul!

And afterwards, Zoë dove right into the LOL doll outfit pods that we hid as eggs. Although, I think she had more fun with the gel the outfit was contained in.


Meanwhile, Jaxon was tired from all that "hardwork". LOL!

Mask Mandates for Covid
Along with the stay at home orders, are mask mandates for when you need to visit the grocery store to pick-up food and other necessities.
Jeric is the only one heading out for all that right now. Which means me and the kiddos stay home. No masks required! But, thought we'd try them on, sort of.

Covid, what?
So at the end of last year, there were stories about Coronavirus, but no one though anything of it.
Now, months later, it's considered a world wide epidemic. Businesses had to all close down. Some people were able to keep working remotely, but the majority of folks weren't lucky enough for that.
Times are definitely scary, but the family is safe and staying home.
So how do we cope? With major group FaceTimes.
