Healthy Eats - Fish Tacos w/Mango Puree

Jeric made yummy mango puree for our fish tacos. He also bought teeny corn tortillas.

Looks pretty dang delicious to me!

Cleaner Eating

Time to try and shed some lbs again! That means, time to eat clean again.

On today's menu? Fish, veggies and rice.

Happy Lab Week!

I'm supposed to start my diet off this week. Or at least another week full of juicing for a meal. Buuut, when I walked into our building, I was greeted by this!

Yup! Donuts for Lab Week. How could I resist? I mean, yes, I can resist. But I was like, to hell with that diet, I'm having me a donut!

Almost Done Juicing!

I've kept up my juicing habits for almost two weeks now. I've pretty much just substituted my lunch for a smoothie from Tropical Smoothie Cafe if I didn't have any already prepped. Must say, the first week was the hardest. But after about a week, it got way easier. I didn't crave as much as I used to. And the drinks from Tropical Smoothie Cafe are pretty darn delicious.

I think I may even keep it up every now and then after the wedding!

Meal Prepping

A bit of meal prepping this week! I decided to juice for a few weeks, so I went to buy veggies and fruits along with mason jars.

I packed all the jars with my kale/spring mix of greens and two fruits. One was strawberry, banana and the other was blueberry peach.


These bad boys were all ready. I just needed to blend them and freeze for the week! Of course, I totally bought the wrong mason jars. The mouth on these doesn't fit the standard blender blade caps. BUM-MER!

I ended up blending in the blender instead of directly into the jar.

And verdict? Strawberry, banana is a good mix, but blueberry peach? Not so much.
